Chocolate chip pancakes take me straight back to weekend breakfasts at Wellesley College. The Pomeroy dining hall cooks made serious pancakes and vegetarian chicken nuggets (though for some reason always shut down my friend’s innocuous request to stock Honey Nut Cheerios). One of the guys was always singing swoon-y songs in Spanish. We also had the best salad bar on campus. Do not be a glutton and put extra chocolate chips in the batter. Chocolate frying pan mess. I used to think that the Pomeroy pancakes could benefit from more chocolate chips. Now I know better.
My sweet friend Alyna (aforementioned denied Honey Nut Cheerios requester) told me that one maple syrup alternative is lemon juice and powdered sugar. She is a snacking extraordinaire, so I believe it!
