These are lil' snacks I make pretty often. I just made up the name! It's not so exciting but I think it's pretty accurate. What I like about these guys is that they're easy-- no bake, means fast and less dishes! Also, there are only 4 ingredients (though you can beef them up with spices and such, if so desired). I was inspired to make these after having a similar treat at Harlow, a vegan eatery here in Portland. I make a lot of recipes from other blogs but this is one I actually just kind of made up by tinkering around (though I'm sure there are super similar ones out there).
Almond flour - 1 1/4 C
Almond butter - 1/3 C
Maple Syrup or honey* - 2 Tbsp
Sesame seeds - 1/4 C
Place the sesame seeds in a little bowl. In a larger mixing bowl, combine almond flour, almond butter, and maple syrup (I personally would use honey but one who is near/dear is allergic). After stirring together, form little bite size balls by hand. Next, roll the balls in the sesame seeds until coated. Store in fridge.
I guess I could say there is actually one more ingredient I use when making these. And that would be...GUM! Though it doesn't actually go in the recipe, chewing gum is a vital tool for me when cooking in general as I have a tendency to "taste" things while in production. This habit can be troublesome as 1) I end up with less bounty and 2) there is often an ensuing stomach ache. I especially make sure to have a fresh pack whenever cooking with wine ;)
